So, apparently a cellar-master stumbled upon a handful of lost casks in \u003cem\u003e\u003cstrong\u003e1889\u003c\/strong\u003e\u003c\/em\u003e. (Why doesn't that happen in our cellar, we wonder...) No one knew when the casks had been filled or who had filled them. But the Brandy inside was\u003cem\u003e\u003cstrong\u003e absolutely exquisite,\u003c\/strong\u003e\u003c\/em\u003e and it was named after the famous Spanish conqueror Carlos the First. ('cuz this Brandy would \u003cem\u003e\u003cstrong\u003econquer the world, \u003c\/strong\u003e\u003c\/em\u003eget it?)\u003cbr\u003e\r\n\u003cbr\u003e\r\n\u003cem\u003e\u003cstrong\u003eCarlos I Brandy\u003c\/strong\u003e\u003c\/em\u003e is made from grapes from the best Airén grapevines. Its mellow taste, velvety texture and aromatic complexity come from \u003cem\u003e\u003cstrong\u003ethe wind \u003c\/strong\u003e\u003c\/em\u003e(the Atlantic ocean, the east and the west winds do their thing),\u003cem\u003e\u003cstrong\u003e the bodega\u003c\/strong\u003e\u003c\/em\u003e (also called cathedrals due to their structure, it's where Wines are safely stored), \u003cem\u003e\u003cstrong\u003ethe wood\u003c\/strong\u003e\u003c\/em\u003e (more than 20 years in American oak casks will leave a mark) and\u003cem\u003e\u003cstrong\u003e the grape\u003c\/strong\u003e\u003c\/em\u003e (the best, as said).\u003cbr\u003e\r\n\u003cbr\u003e\r\nThe artisanal process for the production of this premium Spanish Brandy has been passed down for generations. After distillation in \u003cem\u003e\u003cstrong\u003eMoorish pot stills, \u003c\/strong\u003e\u003c\/em\u003ebrought by the Arabs in the 7th century, the Spirit is aged in American oak barrels: \u003cem\u003e\u003cstrong\u003eex-Amontillado and ex-Oloroso\u003c\/strong\u003e\u003c\/em\u003e - where, thanks to the methods of Criaderas and Soleras, young Spirits are mixed with more mature ones. The casks are never really emptied completely and as older Spirit is drawn out, new Spirit is added.
